Selvedge is the highest quality denim. The shuttle looms that weave selvedge denim can produce a denser weave than non-selvedge. This makes for a better quality, longer lasting denim. 
Selvedge denim is rare. Only about 10% of denim currently made in the world is selvedge. Narrow shuttle looms require more time and maintenance to operate, and produce less fabric per day. This makes selvedge denim much more costly and difficult to produce.
Selvedge denim is known by the woven selvedge edge, which is often used in the final garment.

Deadstock fabrics are left over from textile mills and garment manufacturers. Instead of being thrown away, this fabric is offered in limited quantities to fabric retailers to sell to consumers. Often, we don't know all the details about each fabric, like weight or care recommendations; but have brought it in because it is a high quality fabric at an affordable price.

1 quantity =1/4 yard = 9" x width of fabric (0.228 metres x WOF) and orders of multiple quarter yards are cut in a continuous piece.
